Mashed Potato Soup



Serves about 4 (hearty servings)

1 great big pot of mashed potatoes (about 4 cups)

2 cups chicken broth

1 cup low-fat milk

grated low-fat cheddar cheese (use as much or as little as your conscience will allow)

Make mashed potatoes. Add chicken broth and milk. Bring to a SIMMER. (you don't want to see cream soups separate--it'll make you cry, and that'll happen if you boil any milk based soup or sauce too hard)Stir it up. Then serve it up.

Top with a little cheddar cheese. Or more if you're feeling like it.
