Black Eye Peas Stew

Black Eyed Pea Salsa
Serves: 10



Tired of the same old stews? Full of fiber and whole grains, this vegetarian version will warm your belly!

INGREDIENTS:

1 cup brown rice

2 cups water 2 (15.5 oz each) cans black-eyed peas, drained and rinsed

1 (10 oz) can diced tomatoes with green chili peppers

DIRECTIONS:

1. Bring a small pot of rice and water to a boil.

2. Cover pot, reduce heat to simmer and let cook 20 minutes or until rice is tender.

3. In a large saucepan, combine rice, peas, tomatoes and chili.

4. Stir the mixture over a medium heat until it is heated through.
